PB Choco Chip Cookies

Last fall, I spent an afternoon photographing and baking peanut butter chocolate chip cookies for my other blog. I never transferred those photos over here, so I thought I’d post them now!

Better Than Your Mama’s Peanut Butter Chocolate Chip Cookies


-1 1/4 cups all purpose flour
-3/4 tsp. baking soda
-1/2 tsp. baking powder
-1/4 tsp. salt
-1/2 cup unsalted butter, softened
-1/2 cup smooth peanut butter
-1/2 cup chunky peanut butter
-3/4 cup sugar
-1/2 cup firmly packed brown sugar
-1/4 cup egg whites (or one large egg)
-1 tbsp. soymilk
-1 tsp. vanilla extract
-1 1/2 cups semi-sweet chocolate chips

1) Preheat oven to 350 degrees F.

2) In a medium-sized bowl, combine flour, baking soda, baking powder, and salt.

3) In a large bowl, beat the peanut butter and butter together.

4) Stir the sugar, egg whites, soymilk, and vanilla extract into the large bowl with the peanut butter and butter.

5) Stir the flour mixture in the medium bowl into the peanut butter mixture in the large bowl.

6) Stir the chocolate chips into the cookie mixture in the large bowl.

7) Put small amount of sugar on a plate or dish, and gently press top of rounded teaspoon-size balls of cookie dough into the sugar.

8) Place balls of cookie dough onto baking sheet and press flat with a fork.

9) Bake cookies in oven for 10 minutes. Be careful not to overbake!
