Bran Muffins with Golden Raisins

Because friends share, here’s a sweet video and another.

Pogo, the creator of these videos, made the first one using sounds solely from Disney’s “Alice in Wonderland” movie, and the second “Alohamora”  video has only Harry Potter sounds. Most of his videos are  based on Disney movies, and it’s just a really neat concept.

This is a great New York Times article on the situation in Egypt, especially if you haven’t been reading the news as much lately. The revolution is inspiring, but I have concerns, as I imagine many people do, about the lack of stability in the Middle East as a whole and about the void left behind by Mubarak’s departure.

I made these bran muffins with golden raisins for a dreary and cold afternoon meeting at my internship, and although they were a bit too dry, that’s because I skimped on the yogurt and added too much flour to compensate – don’t make the same mistake. Otherwise, these muffins are yummy and you’ll feel as though you’re doing your body justice when you eat them.

Bran Muffins (from 101 Cookbooks by Heidi Swanson, one of my favorite food photographers of all time) – makes 12 regular-sized muffins

2 c. whole wheat flour
1 1/2 c.  wheat bran
3/4 tsp. salt
1 1/4 tsp. baking soda
2 tbsp. cane sugar (or brown sugar)
2 c. plain yogurt
1 egg, lightly beaten or 3 tbsp. egg whites
1/2 c. honey
2 tbsp. melted butter
1 c. of raisins (and/or nuts)

1) Preheat oven to 425 degrees F.
2) In a medium-sized  bowl, combine flour, wheat bran, salt, baking soda, and sugar.
3) Mix yogurt, egg, honey, and butter in a large bowl. Add dry ingredients from medium-sized bowl to wet ingredients and mix until just combined. Fold in raisins and/or nuts.
4) Grease muffin tins and fill each with bran mixture. Bake approximately 15 minutes.

    That is a really, really nice photo. The shadows and the negative space are work very well together. I didn’t know bran muffins could have so much depth!
